Question: Is there a black arrabiata sauce from near Rome

My husband remembers being served such a sauce, with lots of garli, black olives and, he says, no tomatoes, and was told the recipe came from somewhere near Rome. I can't find a reference to it anywhere.

Arrabiata (angry pasta) is generally a spicy red sauce. You could make something similar with just olives though. You would want to use a lot of the same ingredients you would use in an olive tapenade- olives, lemon juice, garlic, crushed red pepper, herbs and then add some olive oil and mushrooms. Grind it all up and season to taste. It would be thick and serve almost like a pesto.
