Mama Zeta's Pasta Sauce

Ingredients

1 slice bacon - diced
1/4 cup olive oil
1/4 cup (4T) butter
1 pound large onion - about ¾ - diced
1 rib celery - minced
1/4 pound carrots - scraped and grated
1/4 pound sweet sausage
2 bay leaves - crumbled
5 garlic cloves - mashed
1 teaspoon fresh rosemary or 1 tsp dry rosemary
1/2 teaspoon allspice
1 teaspoon pepper
2 cans tomatoes - finely chopped
1/2 teaspoon basil

Preparation

Combine olive oil, beef and pork - break into small pieces and brown. Remove from pan when browned.

Brown chicken breasts and remove from pan

Add bacon, garlic and onions and crumbled bay leaves to the pan with some olive oil as needed. Saute to medium brown.

When the bacon/onions are almost brown, add the browned chicken breasts to the pan and cook for about 15 minutes.

Combine the meats, carrots, celery, tomatoes, tomato sauce, chicken broth & spices in a large pot

And simmer slowly over low heat for 1-1.5 hours, stirring occasionally.

Once simmered - remove chicken from pot and chop or shred the chicken and add the chicken back into the pot

The sauce might need to be thickened - using dry chicken gravy or cornstarch/water or add some flour mixed with chicken broth ... or simmer longer to thicken the red sauce.

Check the saltiness of the sauce, adding more salt if necessary.

Serve Sauce over Spaghetti.

Any sauce that is not used can be frozen for a future occasion.

This Is A Recipe That My Mom Adapted From A Recipe In "Leone's Italian Cookbook" by Gene Leone - recipes from the famous Leone's Restaurant in New York City. The original recipe includes chunks of beef and pork along with chicken livers and chicken gizzards.

Mama Zeta's Pasta Sauce is a delicious Sauce that my Mom made and which we all loved. My Mom hadn't written the ingredients down - she just made it from memory. We all wanted the recipe - so one weekend one of my sisters and I had my Mom make this pasta sauce and we wrote the ingredients and recipe down so that we could have the recipe and hare it with nieces and nephews.

This is a wonderful pasta sauce. I hope you'll try it and find that you enjoy it as much as my family does.
