Stuffed Crawfish Baked Potatoes
Ingredients
6 baking potatoes
4 ounces sharp Cheddar cheese
3 pods garlic, minced
1 cup light cream
1/2 cup chopped green onions
1 pound crawfish tails, cooked
1/2 cup New York sharp Cheddar cheese, grated
Preparation

Bake potatoes at 400 degrees for 1 hour. Make sauce of butter, 4 oz. sharp Cheddar cheese, garlic and cream. Cut potatoes in half lengthwise and scoop out. Put potatoes and mix with sauce. Add green onions and crawfish. Put mixture back in potato shells. Sprinkle with grated New York sharp and bake at 350 degrees until brown.
