Japanese Noodles with Creamy Pumpkin and Avocado Sauce
For the sauce
2 avocados (mashed)
1 tsp dried coriander seed powder
16 oz pumpkin (grated)
2 tsps sea salt
1 tablespoon sesame oil
1 cup soy milk
1 sweet onion (thinly chopped)
For the noodles
8 oz mie noodles (without egg)
Use a big skillet add the sesame oil and saute the onion for about 3-5 minutes.
Add the grated pumpkin and saute until soft for another 5-10 minutes.
Add the rest of the ingredients for the sauce and set aside.
Preheat a big pot of water and boil the noodles for about 3-5 minutes until dente.
Serve the noodles with some sauce on top and sprinkle with paprika powder.
Or you mix the noodles with the sauce before serving.
