To make a fat free cheese that is similar to Cream cheese you would use a plain fat free Yogurt.
Pour the contents of a large contain of the Yogurt into a strainer lined with cheesecloth. Gather up the cheesecloth and gently tie the bundle with twine. Tie this bag of Yogurt to your rack in the fridge with a bowl under it to catch the drips. In about 24 hours you will have a white spreadably, cream cheese like product. It is called labneh cheese.
