Question: Is There A Subsitute For Oyster Sauce In Chinese Cooking?
June 11, 2010
I keep a modified kosher kitchen and do eat any shellfish. What can substitute for oyster sauce. Since I've never tasted it, I don't know what flavor elements I'm looking for. Would soy sauce plus black bean sauce come close? thank you.

If you have an Oriental Market near you, they should have Mushroom Oyster Sauce, along with a good deal of other vegetarian foods. Usually a bit cheaper than the health food stores, too!

Typically you can just add additional soy sauce. I like soy and black bean sauce combo too. Bean sauce has a similar consistency. If you wanted you could use a little fish stock for the flavor (you can make it from scratch so it doesn't have shellfish in it).

I've used the below recipe- I don't care for bottled oyster sauce.
I also have made a sauce using mushroom soy sauce, sugar and corn starch.
1 mushroom bouillon cube
1/2 cup boiling water
2 Tbsp. black bean sauce
1 Tbsp. sugar
1 tsp. cornstarch dissolved in 1 tsp. cold water
