There are two ways to remove the bones from a whole Branzino fish. One is to filet the raw fish. This is done after cleaning and removing the head and fins from the fish. Use a long, thin-bladed filet knife and slide it under the flesh and against the bone from the tail end of the fish. Holding onto the tail, carefully work your way up to the opposite end. Lift the filet free when your are done. Turn the fish over and do the same thing. If the fish has been cooked whole (the best way for this type) then, using a sharp knife, carefully slide the knife in from the dorsal, or top, side of the fish and work the flesh loose from the bone. If you're lucky you can remove the flesh in one piece. The just lift the bones from the remaining side of the fish.
