If you plan to dry green peas, the process usually starts before they are picked. They shouldn't be picked at their peak, rather they are left until their shell yellows. Then they are picked, at this point the water content is minimal and the pea is almost dry, a day or two of air drying will be sufficient to completely dry it out. You can dry tender green peas, by placing them on a baking sheet covered with a clean kitchen towel and air dry for a few days in a dry place. The outcome, however, might not be to your liking.
