Chilaquiles are typically a breakfast or brunch meal. They were originally eaten to use up leftovers, This entree is sometimes called a "poor man's dish." It consists of corn tortillas sautéed with other foods such as eggs, mild green chiles, cheese, chorizo, pork chicken or beef. It typically has a red or green sauce and can be layered like lasagna and baked, or folded like a saucy quesadilla.
