Puree tomatoes in a food processor, bundle the puree in cheesecloth, and tie it to a large spoon. Suspend the bundle over a large bowl or pot and let drain (this can take overnight). The resulting tomato water can be seasoned and used as a light sauce, as a surprise in a summery cocktail, or as the base for a clear soup.
