Szechuan Noodles With Peanut Sauce

Ingredients

spaghetti

linguine
or similar
cup hot
water
cup
smooth peanut butter
2 teaspoons reduced
sodium
soy sauce
2 teaspoons
vinegar
(white
wine
or
rice

scallions
, finely chopped
2 cloves
garlic
, very finely minced
1 teaspoon
sugar
1/2 - 1 tbsp.
hot red pepper
flakes
Preparation
1
Cook pasta until al dente (chewy). Drain and set aside. Keep
warm.
Prepare sauce in order given. Combine sauce and pasta in a
heated
serving
bowl. Makes 4
servings
