Pistachio and Lime Financiers and Soy Chai Latte

Ingredients

1 1/2 cups of finely ground roasted pistachios
185 grams of melted butter
1 1/2 cups of icing sugar
1/4 cup of buckwheat flour
1/4 cup of rice flour
1 tablespoon of lime juice
2 teaspoons of finely grated lime rind

Preheat oven to 200'c fan-forced and grease the oval financier pans with butter and thinly sifted flour.

Beat egg whites until frothy (turn the egg whites upside down over your head - if it is ready it won't drop!). Add in butter, sifted sugar, flours, lime juice and rind and nuts. Mix well.

Spoon the mixture into pans and bake about 20 minutes. Stand them in pans for 5 minutes and take them out onto a wire rack to cool. Brush with hot sugar syrup.

love this idea to try - could I try using a muffin pan or would that just be totally no good at all?

Hi Tanja, you definitely can use the muffin pan - it will not affect the baking process at all. It is traditionally baked in an oval shape to look like a gold bar as the name suggests.

About

If I was sleeping, I would dream about lying down underneath a giant pistachio tree in my own orchard. It was a routine I always did after a busy day of producing a range of pistachio goods in my factory.

In reality, it was midnight and I couldn't sleep. But my love for these tasty nuts wasn't only in a dream. Baking pistachio and lime friands seemed to be the most comforting substitute moment when my dream was a little to far to reach ... (sighed).
