Pistachio and Lime Financiers and Soy Chai Latte
If I was sleeping, I would dream about lying down underneath a giant pistachio tree in my own orchard. It was a routine I always did after a busy day of producing a range of pistachio goods in my factory. In reality, it was midnight and I couldn't sleep. But my love for these tasty nuts wasn't only in a dream. Baking pistachio and lime friands seemed to be the most comforting substitute moment when my dream was a little to far to reach ... (sighed).

- 1 tablespoons lime juice
- 0.25 cups rice flour
- 1.5 cups icing sugar
- 0.25 cups buckwheat flour
- 185 grams melted butter
- 1.5 cups finely ground roasted pistachios
- 6 egg whites

Add in butter, sifted sugar, flours, lime <a href="/technique/QDWRNXYW/juice">juice</a> and rind and nuts. <a href="/technique/7S3QCKWK/mix">Mix</a> well.
Step 4
<a href="/technique/NX588QBK/spoon">Spoon</a> the mixture into pans and <a href="/technique/RNT367Z2/bake">bake</a> about 20 minutes. Stand them in pans for 5 minutes and take them out onto a wire rack to <a href="/technique/GZFHJC5K/cool">cool.</a> Brush with hot sugar syrup.
