Pea and Ginger Soup

Ingredients

2 cups fresh peas
2 cups tbl peeled and roughly chopped ginger, or more to taste, up to ΒΌ
4 cups chicken or other stock, or

Preparation

Reduce heat to simmer, and cook until peas and ginger are very tender, about 15 minutes. Cool.

Pour soup into blender, in batches if necessary, and puree. Return to pan.

Over medium-low heat, reheat gently, stirring occasionally. Adjust seasoning and serve.
