Pea and Ginger Soup

Ingredients
2 cups fresh
peas
2 cups tbl peeled and roughly chopped
ginger
, or more to taste, up to ΒΌ
Salt
and
pepper
4 cups
chicken
or other
stock

Preparation

Combine ingredients in a saucepan, and bring to
boil
over medium-high
heat
.

Reduce
heat
to
simmer
, and cook until peas and ginger are very tender, about 15 minutes.
Cool
.

Pour
soup
into
blender
, in batches if necessary, and
puree.
Return to pan.

Over medium-low
heat
, reheat gently,
stirring
occasionally. Adjust
seasoning
and
serve
.
