Summer Vegetables

Ingredients

1 tablespoon vegetable oil
pound green beans trimmed
3 thin slices red onion
teaspoon salt
teaspoon freshly-ground black pepper

Preparation

In a medium skillet, heat oil over medium heat. Add green beans and carrots and cook 5 to 6 minutes, or until crisp-tender, stirring frequently.

Stir in tomatoes, onion, salt, and black pepper. Cook 2 more minutes, or until heated through.

Serve with "Smashed Potatoes" and "Pork Chops With Gravy" (see recipes).
