Salmon Patties

Ingredients

1 can 15-16 oz. pink salmon
1 each egg
cup minced onion
1/2 cup flour
1 1/2 teaspoons baking powder

Preparation

Drain salmon; set aside 2 tablespoons reserved juice.

In medium bowl mix salmon, egg and onion until sticky. Stir in flour.

Add baking powder to the reserved juice and mix; add to the salmon mixture.

Form four patties, fry in hot oil until golden brown (about 5 minutes).

Optional spices: one garlic clove minced, lemon juice or zest to taste (experiment here) or a little lemon pepper. These could be added based on your tastes.
