Bean salad, also called three bean salad, is mainly composed of cooked pole beans (green beans and/or yellow wax beans), cooked garbonzo beans, cooked kidney beans and sliced or diced fresh beetroot. The beans are marinated in an oil/vinegar vinaigrette, sometimes sweetened with sugar. Salads of this type are often used for picnics and outings, since they require little refrigeration.

teaspoon red pepper |
Step 1 |
Bring beans just to boil in individual pots. |
Step 2 |
Drain and let dry on paper grocery bags to absorb excess water. |
Step 3 |
After beans are completely cooled and dry, gently fold with other ingredients. |
Step 4 |
Garnish with asparagus or purple onion. May be made a day in advance. |
