Greek Vegetable Salad

Ingredients

2 cups Chopped tomatoes
1 Cucumber, thinly sliced
1 small Onion, sliced or chopped
3 ounces Feta cheese, crumbled
4 tablespoons Red wine vinegar
2 teaspoons Olive oil
1 tablespoon Water
1 Clove garlic, crushed

Here's a great salad recipe to accompany that EAster dinner. It is excellent. It comes from a Jenny Craig Diet Easter Menu so it should be fairly low in fat.

In a large bowl, toss lettuce, tomato, cucumber, onion, and green pepper.

Top with cheese. In a separate bowl, whisk oil, vinegar, water, garlic, and pepper. Pour over salad and toss.
