Large cast-iron skillet, seasoned
Outdoor gas grill
1 tablespoon paprika
1 tablespoon dried oregano
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon Zataran's Cajun Seasoning (available at Safeway)
1 tablespoon coarsely ground black pepper
1 tablespoon dry mustard
teaspoon dried tarragon
4 (1 lb) salmon fillets
cup butter (1 stick), plus 2 tablespoons (divided)
Cook 1 to 3 minutes per side, depending on thickness. Repeat with remaining 1 tablespoon of butter and remaining 2 fillets.
Serve in true Cajun tradition with red beans and rice, a nice baguette and a good solid merlot.
