Swiss Chard With Smoked Sausage and Potatoes
12 ounces Swiss Chard trimmed and chopped
1/2 pound smoked sausage diced into ½ inch pieces
3 inches medium baking potatoes peeled and diced into ½ pieces
2 cloves garlic minced
1/4 cup water
3 tablespoons Extra Virgin Olive Oil
1 tablespoon white wine vinegar
1/4 teaspoon sea salt
1/8 teaspoon sugar
Whisk ingredients for ‘dressing’ together and set aside.
Remove sausage and set aside. Wipe out skillet.
Add garlic and sauté for about 30 seconds (until fragrant).
Return sausage to the pan and stir.
Add 1/4 cup water to the pan and place chard on top of potato/sausage mixture.
Cover pan and allow to steam for about 5 minutes.
