Swiss Chard With Smoked Sausage and Potatoes

Ingredients

12 ounces Swiss Chard trimmed and chopped
1/2 pound smoked sausage diced into ½ inch pieces
3 inches medium baking potatoes peeled and diced into ½ pieces
2 cloves garlic minced
1/4 cup water
Dressing:
1 tablespoon white wine vinegar
1/4 teaspoon sea salt
1/8 teaspoon sugar

Preparation

Whisk ingredients for ‘dressing’ together and set aside.

Heat 1 tsp EVOO over medium heat in a non-stick skillet.

Add smoked sausage and cook until browned, about 5-7 minutes.

Remove sausage and set aside. Wipe out skillet.

Heat 1 Tblsp EVOO over medium heat.

Add garlic and sauté for about 30 seconds (until fragrant).

Add potatoes. Stirring frequently cook until potatoes are tender.

Season with sea salt.

Return sausage to the pan and stir.

Add 1/4 cup water to the pan and place chard on top of potato/sausage mixture.

Cover pan and allow to steam for about 5 minutes.

Stir mixture and turn greens over.

Cover and steam for 3 more minutes. Mix thoroughly.

Sprinkle dressing over chard/potato/sausage mixture and mix to coat.
