Apple Crisp Tart

Ingredients

4 Apples, Peeled (Jazz or Fuji brand) and chopped
1 cup Sugar
1/2 cup Brown Sugar
1/4 cup Pear Juice or Apple Juice
1/4 teaspoon Lemon Peel
2 tablespoons Unsalted Butter (Cold and Chopped)
Sparkling White Sugar (King Arthur Flour products) for topping
tablespoon Egg Wash (1 Tbs water plus Egg White)
1/2 teaspoon Salt
7 tablespoons Cold Water
1 teaspoon White Vinegar

Preparation

In a large bowl, mix apples, white and brown sugars, flour, pear juice, Baking Spice Mix, vanilla, lemon peel, and Cinnamon Sugar Mix. Set aside. Crust: Combine flour and salt in a bowl; cut in shortening with a pastry blender until crumbly. Make a well in the middle and add the combined water/vinegar mix. Knead together; wrap and chill crust for 15 minutes. Roll out crust in a large circle on pastry cloth; transfer to non-stick baking sheet (or spray with oil). Pour filling in center of crust but do not overfill to edge of crust - leave enough room to fold crust over half of

You can use a mixture of Allspice, Mace, and Cinnamon.

This is a specialty item - you can substitute by sprinkling with additional cinnamon sugar mix.
