small onions chopped

4

garlic cloves chopped

¼

cup vegetable oil

2

ounces can diced tomatoes - (28 ea) undrained

2

ounces can tomato paste - (12 ea)

8

cups water

¼

cup sugar

2

tablespoons dried Italian seasoning

1

tablespoon salt

1

tablespoon dried basil

2

teaspoons freshly-ground black pepper

1

teaspoon dried crushed red pepper

Step 1

Saute onion and garlic in hot oil in a Dutch oven over medium heat 10 minutes or until onion is tender. Stir in diced tomatoes and remaining ingredients. Bring to a boil; reduce heat, and simmer, stirring often, 2 hours.

Step 2

Divide into recipe portions and freeze.

Step 3

This recipe yields 12 cups.

Step 4

Yield: 12 cups
