Yield: ⅔ cup

[edit] Ingredients

½

teaspoon finely minced scallion

½

teaspoon Dijon mustard

¼

teaspoon salt

½

teaspoon freshly squeezed lemon juice

½

teaspoon wine vinegar

cup excellent olive oil

Freshly ground pepper

Lemon zest

[edit] Preparation

Step 1

Stir the scallions together with the mustard and salt.

Step 2

Whisk in the lemon juice and vinegar

Step 3

When well blended start whisking in the oil by droplets to form a smooth emulsion

Step 4

Add the ground pepper and taste for seasoning

Step 5

Grate fresh lemon zest on top of dressed salad

Step 6

Alternately, shake all the ingredients in a jar, or blend with an immersion blender, until emulsified.

[edit] About Lemon Dijon Vinaigrette

This recipe is based on Julia Child's Basic Vinaigrette Dressing found in "Julia's Kitchen Wisdom". Shallots may be used in place of scallions. Herbs and/or garlic also make delicious additions.
