Fajita Salad

Ingredients

DRESSING
cup oil
Juice of 1 lime
1 cloves garlic minced (1 to 2)
teaspoon dried cilantro
teaspoon white pepper
MEAT
pound pork chicken or beef
2 tablespoons olive oil
3 tablespoons lime juice
2 cloves garlic sliced
1 teaspoon chile powder
1 teaspoon cumin
teaspoon pepper
Lettuce chopped
Sliced Olives
Tomatoes diced
Avocado diced
Mushrooms sliced
Optional: Bell peppers sliced
Jicama sliced
Crushed corn chips

Preparation

FOR DRESSING: Combine ingredients in small pot and heat until bubbly. Simmer 3 minutes.

FOR MEAT: Trim fat from meat and cut into thin strips. Combine remaining ingredients. Stir to blend. In a plastic bag or a bowl combine meat and marinade. Refrigerate overnight.

FOR SALAD: Prepare dressing and set aside. Assemble salad ingredients in a large bowl.

ASSEMBLYSaute meat in a wok or large frying pan.

Combine hot meat and salad dressing in bowl with salad ingredients and toss to coat. Serve immediately.

Serves 4 for dinner, 6 for brunch.
