teaspoon Olive oil |

pound Ground chicken breast, skinless, cooked |

cup Onions, chopped |
½ |
cup Bell peppers, chopped |

Clove garlic, minced |

ounces Crushed tomatoes |

ounces Dark red kidney beans, drained and washed |

teaspoons Chili powder |

teaspoon Cumin |

cup Low-fat Monterey Jack cheese, grated |

Step 1 |
In a skillet, heat oil over medium heat. Add chicken, onions, bell peppers, and garlic. Cook until chicken is no longer pink and vegetables are tender. |
Step 2 |
Stir in crushed tomatoes, kidney beans, chili powder, and cumin. Simmer, covered for 35 minutes. Sprinkle with cheese and serve. |
