Ingredients

1/2 cup olive oil

5 tablespoons blueberry vinegar

2 tablespoons minced red onion

1 teaspoon honey

1 salt and freshly ground black pepper

Preparation

Beat the oil with the blueberry vinegar onion honey and salt and pepper to taste until well blended.

Alternatively place all the ingredients in a screwtop jar and shake vigorously to combine well before using.

Shake the dressing once again before serving.

Spoon this dressing over a colorful mixed fruit salad of wild strawberries or raspberries blueberries and grapefruit.
