Healthy Carrot Cake

1 1/2 cups whole wheat flour
1 1/2 cups unbleached flour
1/2 cup brown sugar
2 1/2 teaspoons baking soda
1 tablespoon cinnamon
2 cups shredded carrots
1 cup crushed pineapple, undrained (juice)
1 cup honey
1/2 cup saffron oil
1 tablespoon vanilla
cup walnuts, optional
