Salt

pepper
Preparation

Cut
the meat into 5-6 inch steaks.
Season
with
salt
and pepper 20 minutes before putting on a very low
barbecue
.

Cook very slowly to allow the eel to lose its fat and become crispy.
Serve
immediately.
