large Eel (2lbs minimum)

Salt and pepper

[edit] Preparation

Step 1

Cut the meat into 5-6 inch steaks. Season with salt and pepper 20 minutes before putting on a very low barbecue.

Step 2

Cook very slowly to allow the eel to lose its fat and become crispy. Serve immediately.
