Thai Rendang

Ingredients

1 kg beef tenderloin, cube
2 tablespoons oil
2 onions, slice
2 cups water
2 bay leaves
5 sprgs basil leaves, chop finely
2 pieces dried tamarind skin
Spices (grind)
4 clvs garlic
2 cm-piece ginger
2 stalks parsley root
teaspoon fennel (jintan manis)
1 teaspoon cumin (jintan putih)
1 teaspoon ground black pepper
15 cili padi
1 teaspoon chilli boh
Seasoning
teaspoon salt
1 teaspoon sugar or to taste
1 teaspoon beef stock granules
1 teaspoon fish sauce (nam pla)

Preparation

Method:DEEP-fry beef pieces in hot oil for 2 to 3 minutes. Drain and set aside. Heat oil; stir-fry onions and ground spices till aromatic.

Add beef, water, bay leaves and tamarind skin. Simmer until beef turns tender and gravy thickens.

Add basil and kaffir lime leaves and seasoning. Cook till sauce is thick and beef is fully cooked and tender. Serve with hot, plain rice.
