Onion Marmalade

Ingredients

1 kg onions, medium
4 tablespoons olive oil
cup sugar (caster)
cup vinegar, white
3 cloves
2 tablespoons tomato paste

Preparation

Peel and slice onions.

Saute the onions in the olive oil until soft, about 5 minutes. Add remaining ingredients, cover, and cook gently for about 1 hour until mixture reaches a jam-like consistency.

Remove from heat, pour off any oil and seal in hot jars.

Keeps for 3-4 months.

Ensure storage jars are well sterilised.
