Banana Cake

Ingredients

1/2 cup butter
1 cup sugar
1 1/2 cups flour
2 tablespoons milk
1 teaspoon baking soda
1 teaspoon baking powder
3 mashed ripe bananas
1 teaspoon vanilla essence
1 pinch salt

Preparation

Preheat oven to 350 F. Dissolve 1 teaspoon baking soda in 2 tablespoons of milk and set aside.

Cream butter and sugar in a medium mixing bowl.

Add egg and baking soda/milk mixture to the mixing bowl.

Add bananas and mix well. Add dry ingredients and vanilla essence.

Pour batter into a greased square pan, cupcake or loaf pan.

Bake in an 8-inch square pan in the oven at (350F or 180C) for 25-30 minutes or until a knife or toothpick comes out dry. It may be necessary to cover the cake with foil half way through to avoid over-browning.

Ice with favorite icing.

About

Chocolate cream cheese frosting is pretty incredible with this cake. A 9x11 cake pan will make banana bars, instead of a tall cake.
