Race Car Pancakes

Ingredients

1 cup soy milk
1 apple – cut into large chunks
1 tablespoon ¼ baking powder
1 teaspoon vanilla
1 teaspoon ½ cinnamon
1 tablespoon peanut butter
2 cups wheat flour (I use hard white winter wheat)
2 tablespoons coconut oil
1 tablespoon agave nectar

Preparation

Add coconut milk, soy milk, and apples to vita mix. Once apples are finely chopped, add baking powder, vanilla, cinnamon, coconut oil, agave nectar, and peanut butter. Blend on variable six for 30 seconds. A regular blender will work as well, or feel free to make this dish in a mixing bowl.

Add wheat. Blend on variable six until smooth – this usually takes no longer than two minutes.

Oil a large skillet with coconut oil, and place on medium heat. Pour about 1/4 cup batter for each individual pancake onto the skillet. Cook until pancakes are lightly browned.

Serve with agave nectar.

My toddler recently informed me that he is a race car... just like Lightening McQueen. My little race car loves to eat pancakes, apples, and peanut butter.... these pancakes combine the best of all three of these yummy foods! KaChow !

Yield:

10.0 pancakes (depending upon how big you choose to make the pancakes!)
