Xavier's Salad Nicoise

Ingredients

4 ripe tomatoes, sliced
1 green bell pepper, stemmed, seeded and chopped
8 radishes, thinly sliced
2 cans of tuna packed in olive oil, well drained
4 hard boiled eggs, peeled and quartered
1/2 cup of olives (Greek) pitted

Preparation

Boil water and place eggs in water, reduce to medium heat and cook approximately 6 minutes, set aside to cool

Rinse tomatoes and slice into 4 even pieces, place at the bottom of the plate

Rinse radishes and thinly slice, place on top of tomatoes

Chopped green bell pepper (½ inch strips or chopped into ¼ inch cubes), place around the plate

Drain the tuna and take ½ of the content, place it in center of plate

Peel eggs, cut in quarters and around the tuna

Garnish with 4 anchovies on top of tuna

Right before serving drizzle a small amount of olive oil around the plate

Add salt and pepper to taste

TIP: Hard boiled eggs can be tested if they are cooked by spinning them on a counter. If the egg spins quickly it is done.
