Sunday Breakfast Panini Stuffed With Apples and Cream Cheese

This recipe was entered in The Foodista Best of Food Blogs Cookbook contest, a compilation of the world’s best food blogs which was published in Fall 2010.

Ingredients

1 large apple , thinly sliced
4 tablespoons fat free cream cheese, softened

Preparation

Place thinly sliced apples in microwave dish, sprinkle liberally with cinnamon, then cover. Microwave on high for 4 – 5 minutes until apples are tender.

Whip eggs with milk in a large bowl big enough to dip bread in.

Preheat panini grill, or nonstick skillet.

Spread 1 tbs cream cheese on each piece of bread. Take two pieces of bread and stuff the cream cheese sides with apples to make a sandwich.

Dip sandwiches in egg mixture and grill 4 – 5 minutes until nicely browned and cream cheese is melted.

Spread cream cheese on both sides of some really great whole wheat bread, stuff the sandwich with apples, and then dip your sandwich in whipped eggs.

Grill to a golden brown, and this is a sandwich kids will love!
