Elizabethan Fare Catering Herb Roasted Chicken
Ingredients
1 Organic roaster chicken (we use organic)
2 cups dry white wine
1 lemon
1 1/2 cups basmati rice or similar
Preparation

Pre heat oven to 400 degrees (we use a convection oven)

Rinse chicken and pat dry

Place into roasting pan

Zest lemon (put aside)

Cut lemon into quarters and put into cavity

Add two+ cups dry white wine into the cavity of the chicken.

Cook @ 400 degrees uncovered for approx 1.5 hours (oven temps vary)

Start rice 15 minutes prior to dinner

Steam vegetables 5 minuted prior to dinner

Chicken gravy made from the wine and herbs is fantastic over the rice.

My Kids call this Crunchy chicken and beg for it. All of their friends want to come to dinner at our house for the "crunchy chicken"

Our daughter LOVES this, any my mother and my husband. Quick, easy, delicious. We often cook it for Sunday night family dinner. Our daughter also likes the "crunchies"
