Trout Baked, With Bay Leaves

Ingredients

1 clove garlic, crushed
2 teaspoons finely minced fresh thyme or 1 tsp. dried
1/4 teaspoon black pepper
6 whole trout, about ¾ lb. each, pan dressed
6 bay leaves
4 tablespoons butter, melted
Juice of 2 lemons
1/4 cup finely minced fresh parsley

Preparation

Preheat oven to 400 degrees. Mix the garlic, thyme, and black pepper. Blend together and spread on top of trout with small spatula. Insert 1 whole bay leaf into the interior of each fish. Oil an oven-to-table baking dish, large enough to hold the fish in a single layer. Pour the melted butter over the fish and bake for 10-12 minutes, basting once or twice with the butter. Sprinkle with lemon juice and parsley before serving. Serves 6.

I prepared this last nite for dinner and I will have to say - it was delicious. I have never baked a whole trout and couldn't believe it would cook so fast. I probably used 15 min on mine. I would only have added salt to the fish while baking it because it was not called for and to enhance the taste. It needed a little. Otherwise - it was simple, easy, and the taste and presentation was great.....
