Macaroni Cheese

Ingredients

2 cups macaroni
1 cup cheese, grated
1 tablespoon parmesan cheese
2 tablespoons butter
cup flour, plain
cup milk
1 onions, medium
1 teaspoon garlic, crushed
teaspoon nutmeg
cup cream

Preparation

Finely dice onion.

Cook macaroni in boiling salted water until "al dente".

Melt the butter in a saucepan and add the flour, stirring with a wire whisk. Add the milk, stirring rapidly with whisk. When blended and smooth, add the onion, garlic, pepper and nutmeg. Simmer gently for 5 minutes stirring the bottom regularly to ensure it doesn't burn.

Add cooked macaroni and bring to boil.

Remove from heat and whisk in combined egg yolk and cream. Sauce should be thick and creamy.

Serve sprinkled with extra cheese and paprika.
