Ingredients
2 pounds
eggplant
1 teaspoon
salt
1/2 teaspoon
pepper
1
egg
, beaten
1 cup cracker crumbs
3 tablespoons
butter
Preparation
1
Pare
eggplant and
cut
into 1/4-inch
slices.
Season
with
salt
and pepper. Dip into beaten egg and then into cracker crumbs. Place in greased
baking
pan; dot with butter and
bake
at 400 degrees for 40 minutes.
