pounds sm. new red potatoes, scrubbed

¾

cup water

¼

cup butter

2

garlic cloves, minced

1

tablespoon finely chopped fresh parsley

Step 1

In medium saucepan, combine potatoes and water; cover. Bring to a boil. Reduce heat; simmer 20-25 minutes, or until tender. Drain.

Step 2

Transfer to serving bowl; keep warm. Melt butter in saucepan; stir in garlic. Cook and stir until garlic is softened, about 1-2 minutes. Stir in parsley. Pour over potatoes. Toss gently to coat. Season to taste with salt and pepper, if desired. Makes 4-6 servings.
