In medium saucepan, combine potatoes and water; cover. Bring to a boil.Reduceheat;simmer 20-25 minutes, or until tender. Drain.

Transfer to serving bowl; keep warm.Melt butter in saucepan; stir in garlic. Cook and stir until garlic is softened, about 1-2 minutes. Stir in parsley. Pour over potatoes. Toss gently to coat.Season to taste with salt and pepper, if desired. Makes 4-6 servings.
