Recipe: Bahama Mama Potatoes edit

pounds sm. new red potatoes, scrubbed |
¾ |
cup water |
¼ |
cup butter |

garlic cloves, minced |
1 |
tablespoon finely chopped fresh parsley |

Step 1 |
In medium saucepan, combine potatoes and water; cover. Bring to a boil. Reduce heat; simmer 20-25 minutes, or until tender. Drain. |
Step 2 |
Transfer to serving bowl; keep warm. Melt butter in saucepan; stir in garlic. Cook and stir until garlic is softened, about 1-2 minutes. Stir in parsley. Pour over potatoes. Toss gently to coat. Season to taste with salt and pepper, if desired. Makes 4-6 servings. |
