Baked Sweet Potato With Mozzarella and Tomatoes

Ingredients

Few sprigs of fresh thyme
1 piece mozzarella or any other cheese
25 grams Sunflower seeds, (1oz)
1 teaspoon Honey
1 Lemon, Juice of
1 tablespoon Olive oil

Preparation

Make 6 incisions into the potato keeping the whole piece together.

Then place in the microwave wrapped in absorbent paper for 6/6 minutes on high.

Then insert the tomatoes and mozzarella slices into the pockets of the potato, season with salt, pepper and any herbs you like such as fresh thyme. Place in a hot oven to crisp the outside and melt the cheese.

Meanwhile mix together the spinach leaves, lemon, grated egg and dress with the lemon juice.
