Director of Technology at the French Culinary Institute Dave Arnold shows Eater Moving Pictures how to prepare what he calls a soup dumpling burger. To do so, he uses a circular disk to fashion each ingredient. He also makes a veal stock gelatin for inside the burger that liquefies as it is cooked.
