A BLAT (bacon, lettuce, avocado, and tomato) sandwich is a step up from the classic BLT. However, I have taken the BLAT to a whole new level with this recipe. You are about to enter a flavor explosion with maple glazed bacon, spicy arugula, fried green tomatoes, and avocado, all brought together between two slices of bread slathered with lemon-pepper mayo. Please tell me, can a sandwich get any better?
Ingredients:
12 thick smoked bacon slices
4 medium green tomatoes - (two large)
¾ cup yellow cornmeal
2 teaspoons salt
1 teaspoon freshly-ground black pepper
¼ teaspoon cayenne pepper
1 tablespoon sugar
4 tablespoons canola oil
8 slices sourdough bread
1 bag Arugula
4 Tablespoons Real Maple Syrup
1-2 Avocados
½ cup Mayonnaise
1 ½ teaspoons pepper
2 teaspoons lemon juice
