Perfect Pumpkin Gluten Free Muffins

Fall is in full swing, and with it comes a bounty of pumpkins.  Pie, curries, seeds; there are countless ways to use this colorful winter squash.

Try these delicious grain free muffins which are naturally low in sugar and are full of goodness.

Spread some fresh butter on them for a nourishing snack.

2 c oat bran (be sure it's gluten free)
1/2 c dates, packed (soak for a few mins in warm water if dry)
1/2 c lite coconut milk (or another non-dairy milk)
1 TBSP baking powder
1/2 tsp baking soda
1/2 tsp salt
1 - 2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp pumpkin spice (optional)
1 2 cups cooked pumpkin
1/3 c raisin or goji berries

Optional: 1/4 cup of hemp seeds
