Easy Corn Dog Muffins for Kids

Corn dog muffins from The Kitchen Life of a Navy Wife are an easy snack to make for the kids.  Corn muffins are studded with a piece of hot dog (preferably all-beef) before being baked in the oven.  This recipe makes the corn muffins from scratch but if you have a box of corn muffin mix on hand, feel free to use that.  If you want to get really kitchen savvy, you can pre-measure a couple recipes worth of dry ingredients into separate zip lock bags and use them as needed- just add the liquid.  Corn dog muffins are sure to be a hit in your house!

Ingredients:

1/2 cup melted butter
1/2 cup sugar
2 eggs
1 cup buttermilk
1/2 teaspoon baking soda
1 cup cornmeal
1 cup all purpose flour
1/2 teaspoon salt
8-10 all-beef hot dogs, cut into 1.5″ bites
