Bacon and Bleu Salad for National Salad Month

To kick off National Salad Month, Foodista is sharing a recipe for a wonderful bacon and bleu salad.  This salad is perfectly balanced: tender baby spinach is paired with smoky bacon, tart granny smith apples, and salty blue cheese.  You can serve this bacon and bleu salad as a starter course or add some protein to make it the main meal.  What is you favorite salad?  Add your salad recipe to Foodista and we might just write about you!

Bacon and Bleu Salad

Ingredients:

2 handfuls baby spinach leaves
4 slices purple onion, halved
2 slices bacon, cooked and crumbled
2 ounces bleu cheese, crumbled
3 tablespoons balsamic vinegar
freshly ground pepper to taste
 
Directions:
 
Plate two generous servings of baby spinach.
 
Top each salad with onion, apple, bacon and bleu cheese.
 
Drizzle olive oil and balsamic vinegar.
 
Season with freshly ground pepper.
