Quinoa and Edamame Salad

Have a healthy weeknight dinner with this Quinoa and Edamame Salad from These Peas Are Hollow. Some might think healthy means boring, but this salad has plenty of flavor and texture to keep your tastebuds happy. A bit of avocado on the side makes this meal hearty and filling. 

Quinoa and Edamame Salad

Ingredients: 
- 1/2 cup cooked quinoa
- 1/2 cup shelled, cooked edamame
- 1/2 oz shaved parmigiano reggiano
- 1 extra large egg
- 2 tsps olive oil, plus more for frying
- Salt and pepper to taste
- 1/2 avocado, peeled, pitted and sliced
