Too-Good Peach Thyme Tartlets

Earthy, fresh thyme complements sweet peach and buttery, flaky crust in these must-have peach thyme tartlets from Love + Cupcakes. You can substitute another stone fruit that's currently in-season, and play around with more savory flavor profiles using strong cheeses or salty cured meats. This recipe suggests a food processor pie dough, and that sounds super easy!

 
Ingredients:
 
2  cups all-purpose flour
1 tablespoon cup granulated sugar
1/2 teaspoon salt
1 1/2 sticks (6 ounces) cold unsalted butter, cut into 1/4 -inch dice, plus 1 tablespoon melted butter
1/2 cup ice water
4 peaches, firm and unripe
1 tablespoon fresh thyme, chopped
1/4 cup + 2 tablespoons raw cane sugar
