Adorable Red Pepper Romesco Tarts in Phyllo Shells

This mini tarts look elaborate and intense, but they're super easy to make and even easier to serve at a party. Red pepper-y romesco sauce and a soft cheese like mild gouda, swiss or parmesan create the best bite-size treat, and store-bought mini phyllo tarts make this recipe from Egg Me On a total cinch.

Mini Romesco Tarts


1 cup of roasted red peppers, drained
2 cloves of garlic
⅓ cup of toasted almonds
⅓ cup of olive oil
1 teaspoon of red wine vinegar
Pinch of red pepper flakes
24 mini phyllo tarts, defrosted
½ lb of cheese, cut into cubes
Dried oregano
