Kenyan Green Banana Chips with Salt and Chili

Smashed and fried banana is a popular snack and side dish in many countries and cultures. These green banana chips are a Kenyan variety sprinkled with salt and hot red chili powder, perfect with a cool beer or to accompany a big ol’ bowl of beef chili.

Salt and Chilli Green Banana Crisps

Ingredients:

12 large green bananas peeled
750 milliliters vegetable cooking oil
tablespoon finely ground salt
teaspoon hot red chilli powder

Oil your hands well with lard before peeling the bananas to avoid them sticking to your hands. Peel the bananas and slice them into thin slices, lengthwise.

Heat the oil for 5 mins on a high heat, drop in a banana slice to test adequate temperature, (the banana slice should rise to the top rapidly). If ready fry all the bananas until light brown and place them on a paper towel to drain the oil.

Once the oil is drained, remove and dust them with the chilli powder and salt. Shake to mix it in well and hey presto, you’re done!
