Healthy Black Rice, Savory Tofu and Avocado Power Bowl

As a busy working mom I often lack the time, energy or desire to cook (seems like a strange thing to hear coming from a food writer, right?). But I feel guilty if I don't serve my family something healthy and satisfying. "Power Bowls" have a become a favorite item in our family. These are easy meals that can be quickly thrown together, but are packed with wholesome goodness. The staples we use for our power bowls are rice for lunches and dinners and rolled oats for breakfast (check out my favorite Power Breakfast Bowl here). Toss in leftover chicken or keep it vegan/vegetarian, you can't go wrong. A few simple ingredients is all you need!

This bowl features black rice (brown rice is also great), baked tofu, and avocado, seasoned with just a bit of sesame oil and soy sauce. Try topping it with chia or sesame seeds for a little nutty flavor.

Vegan Black Rice, Baked Tofu and Avocado Bowl
Serves 1

1.5 cups cooked black rice, or your rice of preference
1 small avocado, chopped
1 brick savory baked tofu, about 3/4 cups, chopped
Sesame Oil
Soy sauce or Golden Mountain sauce (similar to soy sauce)
1 teaspoon chia or sesame seeds

Add rice, chopped avocado, and chopped tofu to a cereal bowl

Season to taste with sesame oil and soy sauce and stir until combined

Garnish with chia or sesame seeds
