Grilled Summer Squash Boats and Other Stuffed Squash Recipes

It's squash season and what better way to celebrate than to cook a multitude of squash centered dishes.  One of my favorite ways to prepare this summer vegetable is stuffing it.  Squash is a mild flavored vegetables so the fillings should be bold and zesty.  You can stuff squash with anything from quinoa, rice, sausage, tomato sauce, cheese, herbs and more.  These three recipes are a dynamite side dish to any summer meal.

Pizza stuffed zucchini boats are a healthy way to enjoy the flavors of your favorite comfort food.  Ground turkey is mixed with jarred marinara sauce to create the filling.  Each zucchini is topped with a mountain of mozzarella cheese before its baked in the oven.
